Ice Cucumber Soup

Cucumber, medium 1 no.
Onion small chopped 1 no.
Butter 1 tsp.
Stock 250 ml.
Milk 4 tbsps.
Seasoning To taste


1.Cut cucumber into pieces, leaving on most of the peel.
2.Fry onion in butter and add cucumber to it.
3.Half the stock, seasoning and simmer gently for 15 minutes.
4.In an electric blender, add milk and rest of the stock.
5.Garnish with lemon.
6.Serve cold.
